Lime Rice
This is one of my daughter’s favorite rice dishes. When she plans the menu for lunch, you will always find ‘lime rice’ at the top of the list. This is an interesting recipe because it uses limes and peas, two things many people don’t really add in the mixed rice dish usually. However, both of these ingredients along with the other spices create a unique and yummy taste. I hope you enjoy the rice!

Seeraga Samba Rice, Cashews, Turmeric Powder, Peanut Oil, Hing Powder, Urad Dal
RECIPE FOR LIME RICE
Ingredients:
Raw Seeraga Samba Rice- 1.5 cups
Limes - 1
Cashews - 12
Turmeric Powder - 1/2 tsp
Peanut Oil - 2-3 tsp
Urad Dal - 1 tblsp
Frozen Peas - 1/3 cup
Green Chilies - 2-3
Mustard Seeds - 1/2 tsp
Hing Powder - 1/4 tsp
Curry Leaves - 5-6
Salt - as needed
Instructions:
Wash and soak the rice for 10 minutes.
Cook rice little stiffer than usual and spread it in a wider bowl
Halve the green chilies, break the cashews into 2, squeeze the juice from the lime and keep it aside
Place a pan on the stove, add the oil in and let it heat up for 2 minutes.
Add the mustard seeds in and let it sputter. Add the ural dal.
Add the cashews and fry until golden brown.
Add the green chilies to the pan and let it fry
Add the turmeric powder, hing powder, curry leaves, and let it simmer for a minute and finally add lime juice and turnoff the heat.
Add all of this to the rice and mix well. Add salt.
Lime rice is now ready to tantalize your taste buds!
Tips & Tricks
Mix the rice with a spatula if it is hot. It might take some time for the spices to mix in completely. It must be bright yellow like it is in the picture.
Turn off the stove when adding the lime juice. When you add the lime juice also add a pinch of salt along with it.
Make sure the rice gets cooked for just the right amount of time. It shouldn’t get too mushy.
