Spinach Poriyal
Spinach is known for its many health benefits. It is rich in iron and zinc. This is an easy recipe to make and very delicious to consume the health benefits that comes with spinach. Hope you love the poriyal!

RECIPE FOR SPINACH PORIYAL
Ingredients:
Onions - 2
Garlic - 2 bulbs
Frozen Spinach - 20 oz. packet
Red Chilies - 7-8
Mustard Seeds - 3/4 tsp
Peanut Oil - 2 tblsp
Shredded Coconut - 1/4 cup
Salt - as needed
Instructions:
Peel the garlic and cut it into small pieces.
Chop the onions finely.
Thaw the spinach and drain the excess water.
Break the red chilies into to two and set it aside.
In a kadai, add peanut oil. Once it is hot, add mustard seeds. Let it sputter.
Add the chopped garlic and the split red chilies. Wait until garlics turn golden brown.
Add the chopped onions. Fry it until it becomes golden brown.
Add the spinach. Saute it until it is well cooked.
Add salt as needed.
Finally add the shredded coconut.
Keerai Poriyal is now ready! This can be eaten with rasam rice or curd rice or simply with plain rice mixed with ghee.
Tips & Tricks
Make sure to drain all excess water from the thawed spinach to ensure the poriyal doesn’t turn soggy. I squeezed the the spinach in my hands to drain the water.
If using fresh spinach, make sure the spinach is cooked well.
