Avocado Cucumber Smoothie

When my mom began searching for creative breakfast ideas during lockdown, I came upon this recipe in our Vitamix recipe book. I wanted this new breakfast to be a refreshing and energizing, healthy and with no sugars, and this seemed to be the perfect fit. After many attempts and adjustments, I have come up with this recipe. This smoothie satisfies all the three things I wanted my smoothie to fulfill and most of all this is a very delicious drink. Hope you enjoy the recipe!

RECIPE FOR AVOCADO CUCUMBER SMOOTHIE

Ingredients:

Serves approximately 3 cups

Lime - 1

Avocado - 1/2

Cucumber - 1

Black pepper- 1/2 tsp

Salt - 1/2 tsp

Water - 1.5 cups

Instructions:

  1. Cut the lime in half. Peel the avocado half and cut into smaller pieces. Roughly chop the cucumber.

  2. In a blender put the chopped cucumber and avocado. Squeeze the lime juice into the blender.

  3. Add water, black pepper, and salt to blender.

  4. Turn on the blender and run until you get a smooth consistency. I use Vitamix and run the smoothie setting fully.

  5. Avocado Cucumber smoothie is ready!

Tips & Tricks

  • Avocado is used to get the consistency of the smoothie. Using a whole avocado will give the smoothie a creamier consistency and will make it more filling.

  • Black pepper and salt are essential to bringing out the taste. You can experiment with the quantities and find what fulfills your tastebuds.
