Drumstick & Pearl Onion Sambar
Moringa powder has now become a buzz everywhere, drumsticks are from the moringa or murungai tree. They are rich in Vitamin A & B complex. This is a simple recipe and there is no need for sambar or special powders to make this.

Toor Dal, Tamarind, Peanut oil, Asafoetida
RECIPE FOR DRUMSTICK SAMBAR:
Ingredients:
Drumsticks - 3-4
Cooked Toor Dal - 1 cup
Pear Onions/Shallots (peeled) - 20
Tomato (roughly chopped) - 1
Green Chili - 1
Turmeric Powder - 1/4 tsp
Mustard Seeds - 1 tsp
Tamarind - lemon-size
Red Chilli powder - 1.5-2 tsp
Sal as needed
Curry Leaves - few sprigs
Coriander Leaves - handful for garnishing
Instructions:
Soak the tamarind in water and extract 2 cups of tamarind juice out of it.
Cut the drumsticks into 2-inch pieces. Put them in a pressure cooker along with 1 cup of tamarind extract from Step 1 and cook for 3 whistles. Keep this aside.
Heat up oil in a thick-bottomed kadai. Once it is heated, add the mustard seeds and allow them to sputter.
Add slit green chilies and saute for few seconds.
Add the onions to this and saute until translucent.
Add turmeric and asafoetida and mix well.
Now, add the tomatoes and curry leaves and mix well.
Add the cooked drumstick and tamarind water, cooked toor dal, and remaining 1 cup of tamarind extract to the kadai and thoroughly mix.
Add the red chili powder and bring the sambar to a boil (this shouldn’t take more than 5 mins)
Add salt and adjust the consistency with water as needed and turn off the flame. Drumstick Sambar is now ready!
Tips & Tricks:
I used fresh drumsticks, if you are using frozen 1 to 2 whistles is sufficient to pressure cook
you can add a spoon of ghee before you trun-off the sambar to enhance the flavor
