Aval Dosai | Poha Dosa
Aval is a good source of carbohydrate that is rich in iron and a good probiotic too. This is my ammaamma’s (mom’s mom) recipe. My mom made it often for dinner and it’s an all time favorite for our family and I totally forgot about it after moving to States. I made it with Desika ingredients listed below and the dosa turned out to be be more fluffier than usual and has become my children’s favorite dosa.
Desika Products:
Ponni Raw Rice, White Aval, Urad Dal, Peanut Oil
RECIPE FOR AVAL DOSA:
Ingredients:
Ponni Raw Rice - 3 cups
White Aval - 3/4 cup
Urad Dal - 1 fistful
Methi Seeds- 1 tsp
Salt as needed
Sugar - 2 tsp
Peanut Oil for making dosas
Instructions:
Soak raw rice for 3 hrs.
Soak urad dal and methi seeds for 3 hrs.
When you are ready to grind, wash the aval and drain it. Keep it aside.
Grind the raw rice into a fine paste using water as needed and transfer it into a container.
Next, grind the urad dal, methi seeds, and aval into a smooth paste using water as needed.
Transfer the ground paste from Step 5 to the raw rice paste in the container. MIx all the ingredients well with your hand.
Ferment it overnight.
When you are ready to make dosas next morning, add salt as required and 1-2 tsp of sugar. If the batter is too thick, add some water. The consistency of the batter should be a little more watery compared to usual dosa batter.
Heat up the dosa tawa and pour the dosa batter from outside to inside and the dosa batter take its own shape, filling the batter in the middle as needed.
Spread the peanut oil around the dosa and some in the middle.
Cover with a lid and cook for 3 mins or until the edges of the dosa become darker brown and the middle part is well cooked. No need to cook the other side.
Crispy and soft aval dosa is ready! Enjoy it with tomato chutney or onion chutney
Tips & Tricks:
This dosa came as expected only when using Desika ingredients. If you are trying it using other store-bought products, you may not get the same results.
Always grind the aval and urad dal spearate from the ponni raw rice. Don’t grind everything together as grinding doing so impacts the dosa’s fluffiness.
