Lauki Subzi|Sorrakaya Koora

Eating LAUKI / Sorrakayya on a regular basis is good for healthy heart, reduces stress, promotes weight loss just to name a few. This recipe is adapted from chef Damu’s version. It is an “all-purpose” subzi as it goes well with many South Indian and North Indian dishes.

Desika Products Used:

Red chilies, Turmeric powder, Red Chili Powder, Jaggery powder, Sesame Oil, Peanut Oil

RECIPE FOR LAUKI SUBZI

Ingredients:

Lauki (chopped) - 2 cups

Tomato - 2

Red Chillies - 2

Green Chillies - 2

Coriander powder - 2 tsp

Red Chilli powder - 2 tsp

Turmeric Powder - 1/2 tsp

Fennel Seeds - 1 tsp

Mustard Seeds - 1 tsp

Curry leaves - 1 fistful

Cilantro - 1/2 fistful

Jaggery Powder - 1/2 tsp

Sesame Oil - 1-2 tsp

Peanut Oil - 1 tbsp

Salt as needed

Instructions:

  1. Chop the tomatoes into big cubes and slit the green chilies down the middle.

  2. Heat up peanut oil in the kadai and add mustard seeds. Allow them to sputter.

  3. Next, add red chilies, green chilies, fennel seeds, and curry leaves. Saute everything well.

  4. Add chopped tomatoes, lauki, red chili powder, coriander powder, and turmeric powder and mix everything together. Add needed salt.

  5. Cover the kadai and cook everything using very little water until the lauki is soft.

  6. Before turning off the flame, add sesame oil and jaggery powder.

  7. Garnish with cilantro and serve

Tips & Tricks:

  1. While cooking lauki, be sure not to add too much water. This will make the lauki way softer than it should be.
