Vegetable Uthappam/ Indian Pizza

Uthappam, or Indian Pizza, as some uthappam fans call, is made with left over Idli batter. Since southern parts of India have tropical weather, the left-over batter becomes a little sour the very next day. This is what gives a yummy taste for a delicious uthappam.

Urad Dal, Peanut Oil

RECIPE FOR VEGETABLE UTHAPPAM

Ingredients:

Serves: 4

Idli Batter - 2 cups

Onion - 1

Carrot -1

Cabbage - 3/4 cups

Capsicum - 1/2 cup

Green Chili - 1 to 2 nos

Salt as needed

To Temper:

Mustard Seeds - 1/2 tsp

Oil - 1 tsp

Urad Dal - 1 teaspoon

Few curry Leaves

Instructions:

  1. In a wok, heat up the oil and add mustard seeds. Once it sputters, add the urad dal and fry for 1-2 mins.

  2. Add the onions and other vegetables and saute for approx. 3 minutes.

  3. Once the tempering cools down, add it to the Idli batter and mix it thoroughly. Adjust the salt if needed.

  4. Heat up a pan.

  5. Take a ladle full of batter and slowly pour onto pan and spread, using circular motions with the ladle, only to the extent the batter will allow it.

  6. Add a spoon full of oil around it and cover it with a lid for 2 to 3 mins on a medium flame so it gets cooked evenly

  7. Remove the lid, flip it to the other side. You don’t have to cover the other side

  8. Uthappams are now ready to serve.

Tips & Tricks:

  • Top the uthappam with some Idli Podi before flipping it to the other side for cooking, to make the uthappam even spicier

  • You can also top it with some shredded cheddar cheese.

  • Never use tomato on uthappam as it makes it very soggy. If you would like to add tomato, make a thick puree of 1/2 tomato and add it to the batter

  • For best results, don’t use the same pan you use for making chapatis, panacakes, etc.
