Bhindi (Okra) Masala
Growing up, I was not a big fan of okra but my grandma always told me it will improve my critical thinking skills and help me with my least favorite subject, math, so okra and I became friends after that. Okra is also called as ladies’ finger and is used in Indian and South American cuisines.

RECIPE FOR BHINDI MASALA
Ingredients:
Serves: 4
Okra - 500g
Tomato - 1
Onion - 1
Capsicum - 1
Red Chili powder- 1 tsp
Amchur/dry mango powder- 1 tsp
Coriander powder - 1/4 tsp
Turmeric powder - 1/8 tsp
Mustard seeds - 1/2 tsp
Curry leaves - few
Oil - 1 tblsp
Salt as needed
Instructions:
Preheat oven to 400 degrees F. Chop the okra into big pieces and marinate in oil and little bit of salt
. Bake in oven for 20 minutes or until okra turns soft and is cooked thoroughly.
Chop the onions, tomatoes, and capsicum into big cubes.
In a kadai or wok, heat up oil and add mustard seeds. Allow them to sputter. Add curry leaves.
Add onions and turmeric powder and saute until half cooked.
Add the baked okra and tomatoes. Let the okra cook well for 2-3 minutes.
Add the capsicum and fry it for additional 2-3 minutes.
Add the coriander powder and mix thoroughly.
Now, add chili powder, amchur powder, and salt as needed. Make sure all the spices are combined well. Cook this on a low flame for 5 mins.
Bhindi Masala is ready!
Tips & Tricks:
If you want, you can bake the okra until crispy for a crunchier curry.
You can also use frozen okra. Make sure to thaw and wash before thawing it.
