Baked Vendakai (Okra) Varuval
Many don’t like to eat okra because of the inherent stickiness of the vegetable, that it takes long time to cook. Baked okra makes it delight to both book and enjoy eating.

RECIPE FOR VENDAKAI VARUVAL
Ingredients:
Serves: 4
Cut Okra- 4 cups
Garlic Infused Olive Oil - 2 tblsp
Peanut Oil - 2 tblsp
Chili powder - 1 tsp
Salt - 3/4 tsp
Instructions:
In a bowl, add garlic oil, peanut oil, chili powder, and salt. Mix this well.
Add the cut okra (1/2 inch pieces) in a big mixing bowl and pour the marination from Step 1 over it. Mix thoroughly so that each okra piece is covered. Set this aside and let it marinate for a minimum of 30 mins
Preheat oven to 400 degrees Fahrenheit.
Cover a baking pan with parchment paper and evenly spread okra .
Once preheated, place pan into oven. Allow the okra to cook for 40 - 60 mins, in 20 minute intervals. At each interval, gently mix the okra to ensure roasting all over.
After the okra cools down, adjust the salt as needed. Varuval is ready!
Tips & Tricks:
The minimum marination time is 30 min but the longer you marinate, the better the taste will be.
If you are able to, cut the okra, marinate it, and refrigerate overnight for best results.
