Red Rice Idlies
This is my favorite new-found recipe that my kids love. I figured this recipe after experimenting different measures. I always use Desika Foods products because they are naturally grown, no mechanical processing or hybrid seeds.
Desika Products:
Red Rice, Chana Dal, Toor Dal, Idli Rice

RECIPE FOR RED RICE IDLIES
Ingredients:
Makes 20-25 idlies
Red Rice - 2 cups
Idli Rice - 2 cups
Urad Dal - 1.5 cups
Channa Dal - 1 fistful
Toor Dal - 1 fistful
Methi seeds - 1 teaspoon
Instructions:
Mix the Red & Idli Rice together in a big bowl and soak it in water for 8 hrs / overnight
Mix the Urad, Channa, Toor dal and soak it together in water for 8 hrs/ overnight
In a mixie / vitamix dry jar add few ice cubes first and then add few layers of dal and grind it to a smooth paste. Add ice cold water if needed
Remove the ground dal and keep it aside and now add the rice, needed ice cubes and grind it to a coarse consistency
Mix the dal and the rice batter together and ferment it 8 hours or overnight
When fermented, grease the idli plates & steam cook the ildies for 10 to 12 mins
Soft Red Rice Idlies are ready
Tips & Tricks:
I usually coarsely grind the urad & other dals and transfer it to food processor to do the reminder of the grinding for dal
Use generous amount of ice cubes instead of water, I add ice cubes first and few ladles of dal and ice cube until contents reach to max of a mixie jar, this avoids the heat generated from the motor
If using grinder use 1 cup urad dal instead of 1.5 cups
Last but not least, I store my batter container overnight in the conventional oven without turning it on. Just turn the oven light on for easy fermentation.
