Vegetable Kurma
Vegetable Kurma reminds me of the farmer’s market in my village, Pichanatham, near Vellore. On the days my grandpa would make it on time to the market, he would get fresh carrot, cauliflower, beans, etc. Whenever he brought those ingredients home, my grandma made sure to make vegetable kurma, which was my all-time favorite as it goes well in both South and North Indian cuisines. I wish I had my grandma’s exact recipe, but this version is her recipe adapted by mom and aunt. Hope you will try and enjoy this!

RECIPE FOR VEGETABLE KURMA
Ingredients:
Mixed Vegetables - 2 cups
Shredded Coconut - 1 handful
Cloves - 2
Cardamom - 1
Cinnamon Stick - 1 small piece
Ginger - 1 inch
Garlic - 2 pods
Coriander Seeds - 1 tsp
Green chilies - 7-10
Onion - 1
Tomatoes - 1
Curd - 1 tbsp
Roasted Bengal Gram Dal - 1 tbsp
Curry Leaves - few
Salt as needed
Instructions:
Thinly slice the onions and roughy chop the tomato.
In a mixie jar, add the coconut, ginger, garlic, chili, coriander seeds, and roasted bengal gram dal. Grind this into a smooth paste using water as needed.
Steam the mixed vegetables until they are almost cooked but not too mushy.
In a kadai, heat up oil and add the cloves, cinnamon, and cardamom. Saute the spices continuously until it releases a nice aroma.
Add the onions and roast until golden brown.
Add the tomatoes and curry leaves and cook until the tomatoes are mushy.
Add steamed vegetables and 1 cup of water to the kadai and mix throughly. Add salt at this stage and bring the water and contents to a rolling boil.
Once the water is boiling, add the ground mixture from Step 2 and cook for not more than one to two minutes. This is to ensure the raw smell of the grinded ingredient is gone.
Turn off the stove. Whisk the curd until it is creamy and smooth and add it to the kurma.
Mix the kurma well. Adjust the salt if needed.
This delicious kurma is ready! Garnish with chopped cilantro.
Tips & Tricks
Don’t cook the ground paste from Step 2 too much.
Ensure the stove is turned off before adding the curd.
