“Red Velvet” Date Bites
Every holiday season, I acquire an unsatiable craving for sweets. Often, I find nothing sweet enough in our pantry to fulfill my cravings. This is when I turn to Google to search for delectable dessert recipes. While browsing this year, I came upon the Minimalist Baker’s recipe for “Red Velvet Cake Balls”. Though I was skeptical about the beetroot powder included in the recipe, I decided to try anyways and am very happy I did. I adapted the recipe from Minimalist Baker. This easy to make and delicious dessert has become a delightful treat for my sweet tooth. Happy Holidays!
RECIPE FOR “RED VELVET” DATE BITES
Ingredients:
Pitted Dates - 1 cup, packed
Almond flour - 1/4 cup
Coconut flour - 1 tblsp
Beetroot Powder -2 tblsp
Cacao Powder - 1/4 cup
Maple Syrup - 1 tblsp
Vanilla Extract - 1 tsp
Coconut Milk - 1 tblsp
Cacao Powder and Beetroot Powder for rolling
Instructions:
Grind the pitted dates until a small ball forms.
Add the almond flour, coconut flour, cacao powder and beetroot powder and pulse ingredients together.
Transfer the grinder contents into a bowl and add the maple syrup, vanilla extract, and coconut milk. Mix together with fingers until a pliable dough consistency forms.
Using an ice-cream scoop or dosa ladle, scoop out ping-pong ball size portions and roll the dough into balls between your palms.
Once a nice round ball has been formed, roll the ball in the cacao powder and beetroot powder set aside for this step.
Refrigerate for 1-2 hours and enjoy!
Tips & Tricks
You can use just almond flour or coconut flour for the recipe but a combination of both gives the dessert a nice nutty flavor.
Adjust the amount of maple syrup and vanilla extract according to the sweetness of your choice of dates.
Rolling in beetroot and cacao powder is optional. Use whatever pleases your taste buds.
This can be refrigerated for up to 2 weeks.
