Kodo in a Bowl - Millet Burrito Bowl
When I was struggling to get my family to eat millets, I stumbled upon this idea from ticklingpalates.com and modified it to my family’s liking. This dish is on our weekly menu on Wednesdays and my family looks forward to this day every week.

RECIPE FOR KODO IN A BOWL
Ingredients:
Serves: 4
FOR GUACAMOLE:
Ripe Avocadoes - 2
Tomato - 1
Onion - 1 (medium)
Jalapeno - 1-2 (depending on your spice level)
Cilantro- a handful
Lime - 1
Salt- as needed
FOR SALSA:
Big Tomato - 1
Onion - 1
Cilantro or Basil- 1/4 cup,
Jalapeno -1
Salt- as needed
OTHER INGREDIENTS FOR BURRITO BOWL:
Kodo Millet - 1 cup
Rajma Beans or Black Beans - 1/2 cup
Sour Cream and/or Cheese - your favorite :)
Corn - optional
Hot Sauce- optional
Instructions:
GUACAMOLE:
Peel and thoroughly mash avocadoes. Squeeze in one whole lime to ensure the avocadoes don’t turn brown
Finely chop onion, tomato, cilantro, and jalapeno.
Combine avocadoes and finely chopped ingredients from Step 2 in a bowl. Add salt as needed.
Mix well and set this aside. Guacamole is now ready!
SALSA:
Finely chop tomato, onion, and cilantro/basil.
Combine all of this in a bowl and add salt as needed.
Mix well and set it aside. Salsa is now ready!
BURRITO BOWL:
You can either use canned rajma beans or black bean or you can soak dried rajma/black beans for 8 hrs. and pressure cook.
Soak kodo millet for 1 hour and wash and rinse thoroughly (at least 3 times).
Add 1 cup of water to the kodo millet and pressure cook it for 4-5 whistles.
Let pressure release from the millet.
Take two scoops of cooked kodo millet in a bowl. Top with rajma beans, guacamole, salsa, and your choice of cheese and sour cream.
Your kodo in a bowl is ready to eat!
Tips & Tricks:
Preparing the salsa and guacamole at least an hour before enhances the taste.
DO NOT SKIP SOAKING AND WASHING the kodo millet as it will be hard otherwise
Cook the millet just before eating to enjoy your burrito bowl fully
