Vegan Orange Kheer
Recently I switched to a vegan diet and greatly missed payasam and kheer. I finally chose to adapt some milk-based recipes to fit into my vegan style and this is one such recipe that I came up with. This is based off of the recipe on jeyashriskithcen.com

Cashews
RECIPE FOR VEGAN ORANGE KHEER
Ingredients:
Cashews - 1 cup
Oranges - 2
Water - 3 cups
Maple Syrup - 3 tblsp
Pistachios (chopped) - 1/4 cup
Saffron - few strands
Instructions:
Soak the cashew in hot water for 3 hrs.
Drain the water and put the cashews into the Vitamix. Using 3 cups of water, run it in the hot soup setting until complete.
Pour this cashew milk into a pan and heat it up for a minute or two.
Peel the oranges, removing the white skin entirely. Cut it roughly in to small pieces.
In the hot milk, add saffron and maple syrup. Mix wellk.
Once the milk is cooled, add chopped oranges and pistachios and mix well.
Refrigerate this for couple of hours or overnight and serve chill.
Tips & Tricks:
If you don’t have a Vitamix, grind the soaked cashews in a smooth paste. Transfer the paste into a bowl and add 3 cups of water. Mix this well and place on stove for 5 mins. If using mixie, use 2 tblsp of sugar instead of maple syrup.
You can also replace maple syrup with sugar or honey.
You can also use other nuts of your choice for topping.
Once you add the oranges, you cannot reheat the kheer.
