Baked Brussel Sprouts

After moving to United States, I realized how my mom must have struggled every time I complained even when she cooked different recipes with the same vegetables. Now it is my turn. I continuously have to find creative ways to make my kids eat vegetables. I finally succeeded with this baked Brussel sprouts recipe.

Ingredients:

Brussel Sprouts - 3 cups

Black Pepper (whole) - 3 tsp

Cumin Seeds - 2 tsp

Dried Lemons - 1 piece

Salt - 1.5 tsp

Peanut Oil - 4 tblsp

Instructions:

  1. Preheat the oven to 400 degrees Farenheit

  2. Thoroughly wash the Brussel sprouts, peel a few layers off, and cut into quarter pieces.

  3. Microwave the black pepper for 20 sec.

  4. Take it out and add the cumin seeds. Mix and microwave black pepper and cumin seeds for an additional 20 sec.

  5. In a mixie jar, add the black pepper, cumin seeds, salt, dried lemon and run it until it reaches a powder consistency.

  6. Transfer the contents of the mixie jar to a bowl and add the peanut oil. Mix well so that all ingredients are thoroughly combined.

  7. Taste the marination and adjust salt as needed.

  8. Pour the marination over the Brussel sprouts and mix well. Allow this to sit for 15 mins.

  9. Transfer the marinated brussel sprouts to baking sheets. Bake for 20-25 mins or until Brussel sprouts begin to turn dark brown, mixing in between.

Tips & Tricks:

  • Make sure the powder in Step 5 isn’t too fine or too coarse as the taste will change.

  • Cooking time may vary - make sure to keep an eye on the Brussel sprouts while baking as they can burn rather quickly

  • Adding garlic oil to this recipe adds a tasty twist. If you are doing this, use 2 tbsp garlic oil and 2 tbsp peanut oil for the marination.
