RECIPE FOR LAUKI & ZUCCHINI DOSA

Ingredients:

Idli Rice - 1 cup

Toor Dal - 1 fistful

Channa Dal - 1 fistful

Lauki - 1 cup (cut into cubes)

Zucchini - 1 cup (cut into cubes)

Salt - as needed

Peanut oil for making dosas - 4 tblsp

Instructions:

  1. Wash & soak the idli rice along with all the dal listed above for at least 3 hours.

  2. Peel and cut the lauki and zucchini into big cubes — as mentioned in the ingredients list, you should get 1 cup of both.

  3. After the soaking time, grind the rice, dals, and veggies into a smooth paste. Please be careful not to add too much water as veggies will have water in it already.

  4. Transfer this to a bowl and add salt.

  5. There is no need to ferment the batter, just set it aside for 30 minutes.

  6. Heat up the dosa tawa and take a big scoop/ladle of batter to make dosa - DO NOT spread it too thin - make it thicker than you would a normal dosa.

  7. Once cooked flip the dosa & cook the other side. No need to add oil on the other side. If needed, you may cover the dosa while cooking.

  8. I enjoyed this dosa with onion chutney. It can also be eaten with tomato chutney.

Tips & Tricks:

  1. Please do not add frozen lauki/zucchini to make this dosa. Always use fresh lauki & zucchini

  2. In general, do not use the same pan that you use to heat up/ cook chapathis, this will cause the dosas to stick to the pan

  3. After you heat up the pan and before making dosa, you can rub a cut onion half onto the pan to season the pan for crispy dosas

  4. You can follow Tip 3, even in between dosas, this will prevent the dosas from getting stuck to the pan.
