Mixed Vegetable Poriyal
If you would like to try something different with mixed veggies then you must try it. It’s easy to make & perfect for that unannounced get-together parties!

RECIPE FOR MIXED Vegetable Poriya
Ingredients:
Serves: 4
Cauliflower - 1 (small)
Frozen mixed vegetables - 1 pack (carrots, green peas, lima beans, green beans)
Garlic - 20-25 pods
Ginger - 2-3 inch piece
Green chili - 1-2
Red chili - 1
Turmeric Powder - few pinches
Coriander powder - 1/2 tsp
Chili Powder - to taste
Mustard seeds - 1 tsp
Jeera - 1/2 tsp
Urad Dal - 2 tsp
Oil - 2 tbsp
Salt - as needed
Instructions:
Cut the cauliflower into small florets. Put it in very hot water with little salt. Allow it to sit for 10 minutes.
Finely chop the garlic, ginger, and green chili.
In a kadai, heat up the oil. Once it is hot, add the mustard seeds and allow them to sputter. Add the jeera and mix.
Add the red chili and urad dal and saute until the turns golden brown.
Now, add the finely chopped ginger, garlic, and green chili and saute until the garlic turns brown.
Add the mixed vegetable and saute until they are soft. Add salt at this stage.
Add the cauliflower to this and mix thoroughly.
Now add the red chili powder, coriander poweder, turmeric powder, and mix well.
Tips & Tricks:
You can add a little water while cooking the vegetables. I did not use because I use AMC waterless cooking pots & it cooks vegetables well without water.
I like to add fresh cauliflower, as I like it fresh and little crunchy
