Mushroom Capsicum Fry

My oldest daughter loves mushrooms. For a long time, we only ate it in pizzas because I didn’t know how make an Indian dish using mushrooms. Finally, I found and adapted this recipe from Chef Damu’s cookbook and a combination of similar recipes from YouTube. This is quite easy to make and is a great side for jeera rice and chapatis.

Desika Products:

Peanut Oil, Turmeric Powder, Cloves, Cardamom

RECIPE FOR MUSHROOM CAPSICUM FRY

Ingredients:

Serves: 4

Onions - 2

Tomato - 1

Capsicum - 1

Mushrooms - 600g

Ginger Garlic Paste - 2 tbsp

Cloves - 5

Cinnamon - 1 stick

FOR MASALA MIX:

Red Chili Powder - 2 tsp

Coriander Powder - 2 tsp

Turmeric Powder - 1/4 tsp

Instructions:

  1. Thoroughly wash the mushrooms and make sure there is not dirt on them.

  2. Finely chop the onions. Cut the tomatoes and capsicum into big cubes.

  3. Heat up oil in a thick-bottomed pan and add cinnamon and cloves

  4. Add onions and fry.

  5. When the onions are half-fried, add ginger garlic paste and saute until it produces a nice aroma and lets out oil.

  6. Add tomatoes to this and saute it.

  7. Add whole mushrooms and saute until water oozes out of it.

  8. Now add the masala mix (red chili powder, coriander powder, turmeric powder) and mix well.

  9. Garnish the curry with chopped mint and coriander leaves.

Tips & Tricks:

  • Washing mushrooms is an art — you cannot soak it in water. You should wash it as soon as possible and buying. Wash it by running it in water in a colander, making sure there is not dirt in it.
