Mor Kahli - Buttermilk Upma

Mor Kahli, or buttermilk upma, is a gluten-free upma made with rice flour and buttermilk. I have found that making this upma is the best way to get my younger one to eat buttermilk. It’s a tasty solution to get your kids to eat dairy!

Peanut Oil, Rice Flour, Chana Dal

RECIPE FOR MOR KAHLI

Ingredients:

Serves: 4

Rice Flour - 1 cup

Curd - 1 cup

Green chilies - 3-4 (according to your spice level)

Chana Dal - 1 tblsp

Mustard Seeds - 1/2 tsp

Curry leaves - 3 sprigs

Water - 1 cup

OIl - 4 tblsp

Salt - as needed

Instructions:

  1. In a mixie jar add green chilies, curd, and 1/4 tsp salt. Blend this to a find paste.

  2. Add water to this smooth paste and mix well in a bowl.

  3. To the mixture from step 2, add the rice flour. Mix thoroughly and without lumps.

  4. Take a thick-bottomed kadai or pan and add 2 tblsp of oil. When the oil is heated up, add the mustard seeds and allow them to sputter.

  5. Add chana dal and curry leaves and roast until the dal turns golden brown. To this add the mixture from Step 3 and the remaining oil. Mix it well until it reaches a tough, dough-like consistency and leaves the oil on the sides of the kadai.

  6. Cover this with a lid and allow it to sit on low flame for 5-10 mins or until the raw smell goes away.

  7. Mor Kahli is ready enjoy! This makes a great meal with a side of onion chutney.

Tips & Tricks:

  • If you don’t want to steam in the kadai, transfer it to a pressure cooker container and cook it for 1 whistle.

  • The curd should be a little sour for this upma to taste good. You can also use store bought buttermilk, but this may not bring as good a taste as homemade buttermilk/curd.
